Scientific description: Ensis Siliqua Minor
This mollusc lives deep in the sand in the waters of the Adriatic sea and assumes a vertical position to immerse itself in the sea bottom. The commercial fishing of the razor clam consists in the use of the so-called “cannellare”, i.e. turbochargers spraying pressurised water to facilitate the penetration of dredgers suitable for the extraction of these creatures.
From the nutritional view point, razor clams are very rich in protein and minerals, such as phosphorus, iron and sodium.
