Shad (Round Sardinella) is a fish highly caught in the Mediterranean, a fish food widely known in Italian cuisine due to its particular flavor and nutritional richness.
Scientific description: Sardinella Aurita
It lives in large herds mainly in the Mediterranean deep waters – including the Adriatic and the Ligurian Sea. This is due to the fact that it is a thermophilic fish that prefers warm waters. It is caught using purse seine techniques and rarely with the trawl technique.
Shad has remarkable nutritional properties, as its meat is rich in fish oil. In fact even in past centuries, shad was preserved in salt and consisted in one of the main foods for sailors traveling across the Mediterranean.
